Cauliflower And Chickpea Curry

Method

  • 1. Fry the onion in a large skillet.

  • 2. Add garlic and ginger and cook for another 2 or 3 minutes.


  • 3. Cook the cauliflower until tender, about 5 minutes. Drain and set aside.


  • 4. Add chickpeas and spices to the onions.

  • 5. Add the cauliflower and stir to coat with the spices.

  • 6. Add the coconut milk and cook until chickpeas and cauliflower have heated through.



  • Ingredients

    • 1 tbsp. Vegetable oil
    • 1 Onion, diced
    • 1 clove Garlic, finely chopped
    • 1 piece Ginger, peeled and finely chopped
    • 0.5 can Chickpeas, drained and rinsed
    • 1 small Cauliflower, cut into florets
    • 1 tsp. Cumin
    • 1 tsp. Thyme
    • 1 tsp. Curry powder
    • 1 tsp. Turmeric
    • 1 tsp. Ground coriander
    • 2-3 oz Coconut milk
    • to taste Salt and pepper
