Cauliflower And Chickpea Curry
Method
1. Fry the onion in a large skillet.
2. Add garlic and ginger and cook for another 2 or 3 minutes.
3. Cook the cauliflower until tender, about 5 minutes. Drain and set aside.
4. Add chickpeas and spices to the onions.
5. Add the cauliflower and stir to coat with the spices.
6. Add the coconut milk and cook until chickpeas and cauliflower have heated through.
Ingredients
- 1 tbsp. Vegetable oil
- 1 Onion, diced
- 1 clove Garlic, finely chopped
- 1 piece Ginger, peeled and finely chopped
- 0.5 can Chickpeas, drained and rinsed
- 1 small Cauliflower, cut into florets
- 1 tsp. Cumin
- 1 tsp. Thyme
- 1 tsp. Curry powder
- 1 tsp. Turmeric
- 1 tsp. Ground coriander
- 2-3 oz Coconut milk
- to taste Salt and pepper
