Cook onion and carrot in pot for few minutes till onion is soft.
Add mince and brown it.
Crumble oxo cube into mince, onion and carrot mixture.
If the mince is quite lean it might need a bit of water added or tbls of bisto powder mixed with half a cup of cold water to stop it sticking.
Add in potatoes, you can pre cook the potatoes and then add them but i don,t see the point as they will be cooked by the time the mince is done anyway.
Cook this for at least 20-30 minutes or until carrots and potatoes are soft.
Best to leave this till cold before the next step, but if you''re short for time its not necessary.
Roll out puff pastry till about 1/4 inch thick and then cut it into about 8 squares.
Put about a heaped tbls onto one side of pastry (don,t put too much on or it will only seep out).
Brush egg round edge of one side of pastry and fold over. Put slit in top to let steam out while cooking.
Brush egg over the top and place on greased baking tray.
