Method

  • Place flour in bowl and rub in marge, until mix is like Bread crumbs.
  • Add sugar and currants, mix well.
  • Add eggs and mix into a soft dough.
  • Knead lightly.
  • Roll out on a lightly floured surface to about 1/4" thickness, cut into rounds.
  • Cook on a preheated griddle.

    • 100g Sugar
    • 75g currants
    • 2 eggs
