Method

  • Rub the joint with the salt, pepper and seasoning.
  • Place in roasting tin.
  • Spread with some honey.
  • Pour a little water around the joint, Then place in a preheated oven at 190 C.
  • Cook allowing 20 mins per 450g (1 lb) and 20 mins on top of that.
  • Baste with honey and water when the lamb has been cooked for half of the alloted time.
  • Add a little more honey, chopped mint and vinegar before serving (all optional).
  • Ingredients

    • 1 Joint of Welsh lamb (Leg or Shoulder)
    • 225g Welsh Honey
    • To taste Seasoning
    • To taste Salt
    • To taste Freshly ground black pepper
