Method

  • Put sheets of non-stick paper onto baking trays.

  • Put egg whites into a large clean bowl.

  • Beat until stiff and will stand in peaks.

  • Gradually whisk in the caster sugar a tablespoon at a time, beating well after each addition.

  • Spoon or pipe ovals onto the baking sheets.

  • Bake at 110C for about 2 hours. They may be left in the oven until cold.

    • 3 Egg Whites
    • 150gr 6oz Caster Sugar
