Method

  • Best to grind the coriander and cumin from fresh whole spices.

  • Adjust colouring to make a muted reddish-tan colour (similar to the colour of the lower right spice in the picture).

  • Mix together and store.

  • Use for any tandoori dish.

    • Suggest making with beetroot powder for the red colouring in replace of artificial food colourings, maybe also use Turmeric for the yellow!

    Ingredients

    •  Makes a small jarful for storage in the fridge up to 1 year
    • 45g Ground coriander
    • 45g Ground cumin
    • 45g Paprika
    • 25g Ground ginger
    • 25g Amchur powder (mango powder)
    • 25g Dried mint
    • 20g Cayenne powder
    • 1 tsp Red colouring powder
    • ½ tsp Yellow colouring powder
    • 1 tbs Garlic powder (optional)

    This tandoori mix can be used to make Paula's Chicken Tikka or as a tandoori rub on its own.
