Method

  • 1. Put all ingredients except for the milk in the processor and the blitz till smooth.

  • 2. Pulse while adding milk down the funnel, to make for a soft ,dropping consisitency.

  • 3. Spoon and scrape the mixture into the cases equally.

  • 4. Put in oven and cook for 18 mins in a hot oven.

  • 5. Mix the ingredeints for the icing in a bowl and ice the cakes once they are cool.

  • 5. Beat together the (sifted) icing and the butter and apply generously when cakes are cooled

    • 125g unsalted butter
    • 125g caster sugar
    • 2 large eggs
    • 125g self raising flour
    • ½ teaspoon Vanilla Extract
    • 2-3 tablespoons milk
    • ICING
    • 100g very soft unsalted butter
    • 100g icing sugar
    • optional. a few drops food colouring
