Strawberry Trifle

Method

  • 1. Pull the stalks out of the strawberries,trying to keep the core attatched.If you need to,dig out with a small knife.

  • 2. Cut most of the strawberries in half,or into quarters if they are very big.Put them into a medium-sized bowl.

  • 3. Cut the sponges in half and spread them with jam.Press them back together,then cut them into quarters.

  • 4. Lay the sponges on top of the strawberries.Gently mix everything together,then trickle the apple juice over the top.

  • 5. Cover the bowl with plastic foodwrap and put it into a fridge for about 3hrs.The sponges will go soft.

  • 6. Grate the yelloe rind from the lemon,using the medium holes on a grater.Scrape off the grated rind with a knife.

  • 7. When the sponge mixture is cool,pour the cream into a large bowl.Add the milk,lemon rind,vanilla and sugar.

  • 8. Whisk the mixture with a whisk,until it is slightly stiff.Stop before it becomes too solid,or it will be to hard to spread.

  • 9. Spread the creamy mixture over the cooked sponge mixture.Then,put the trifle into a fridge until you are ready to serve it.

    • 500g Fresh strawberries
    • 6 Trifle sponges
    • 4 Tablespoons of apple juice
    • 1 Small lemon
    • 300ml Double cream
    • 2 Tablespoons of milk
    • ½ teaspoon Vanilla essence
    • 2 Tablespoons of strawberry jam
    • 2 Tablespoons of caster sugar

    The strawberry trifle is the first dessert apart from cakes and biscuits i have ever made.
