Method

  • Prepare the fruit by soaking it with the sugar in the cold tea overnight.
  • Next day simply stir in all the remaining ingredients,and spread the mixture into a very well-greased roasting tin measuring 11 1-2 times 9 inches.
  • Bake in the center of a pre-heated oven,gas mark3 for about 1 hour and 10 mins or until golden brown on top and springy to touch in the center.
  • Then straight away turn it out onto a wire rack, turning it the right way up again.
  • As soon as its cool slice across into about 1-2-inch thick slices and serve thickly spread with butter.

    • 500g mixed cake fruit
    • 500ml Boiling water
    • 2 Teabags
    • 200 g Moist brown sugar
    • 250 g Self raising flour
    • 1 egg
    • ½ tsp Mixed cake spice

    Tastes lovely when it is freshly made & served cut in thick slices & well buttered. It also keeps very well but you'll have to remember always start it the night before you need it
