Chicken Jalfrezi Curry

Method

  • Mix ginger, garlic, turmeric, garam masala and salt together.

  • Coat chicken with this mix and allow to marinate for 2-3 hours.

  • Heat oil or ghee in a wok or kadhai.

  • Add sliced onions, green chillies and green peppers and fry for a couple of minutes.

  • Add tomato wedges, stir fry for 2-3 minutes.
  • Lift out with a slotted spoon and keep aside.

  • Heat 2 tbs. oil or ghee in a clean pan or wok, add marinated chicken and stir-fry for 5 minutes.

  • Add chilli powder and tomato puree and cook on low heat, until chicken is cooked. Stir-fry until excess gravy is evaporated and chicken looks well fried.

  • Add fried vegetables, prepared earlier, and stir-fry for a couple of minutes.

  • Turn heat off.

  • Sprinkle green coriander leaves.

  • Give it a quick stir and serve hot with Tandoori Roti or Chapatti.

    • I used red peppers and red chillies as that was all available in the fridge at the time and the current mrs farrington found it too hot. Flavours were very good, hopefully next time I cook it it will be to her taste. I enjoyed it, though.

    Ingredients

    • 500g Chicken pieces skin removed and washed (breast pieces are good for this dish)
    • 2 inch Piece ginger peeled and finely grated
    • 3 Cloves garlic peeled and grated
    • ½ tsp Turmeric
    • 1 tsp Garam masala
    • 2 Medium onions peeled and thickly sliced or chopped
    • 2 Green pepper
    • 2 Green chili
    • 2 Large tomatoes cut into medium wedges
    • 2 tbsp Oil
    • ½ tsp Chili powder
    • 2 tbsp Tomato puree
