Jacquie's Broccoli and Stilton Soup

Method

  • Heat butter in a large pan and add the chopped onion. Cook for a few minutes until softened.

  • Add broccoli to pan, cover with stock and simmer for about 15 mins.

  • Crumble cheese into soup and stir till melted.

  • Season generously and blend in batches till smooth.

  • Serve immediately.

    • 25g Butter
    • 1 Onion chopped
    • 1 kg Frozen broccoli
    • 750g Vegetable stock
    • 200g Stilton
