Method

  • Whisk egg yolks,sugar and vanilla essence in a mixing jug leave to one side.

  • Over a pan of water heat in a bowl the cream, not to the boil, then add the yolk mix and whisk in. ( hand whisk only).

  • Pour into 6 x ramekins and put into an ovenproof flatish dish and fill with water put in oven (150c/300f) for an hour.

  • Remove ...if you have a flame burner you can sprinkle with sugar and caramelise tops or otherwise sprinkle with brown and grill tops.
  • Ingredients

    • 600ml/1pint Fresh whipping cream
    • 4 x Egg yolks
    • 75g/3oz Caster sugar
    • 5ml/1tsp Vanilla essence
