Hake Steaks in Green Curry

Method

  • 1. Season the Hake steaks with salt and pepper, and dust with a little flour.

  • 2. Heat the oil in a sauce pan and fry the steaks very gently on each side, do not cook through, remove from the pan and set aside.

  • 3. Make the sauce in the same saucepan, add a little more oil if need be, add the onions and ginger, lemon grass, curry paste, lime leaves and palm sugar.

  • 4. Cook this whilst stirring, until onions are half cooked.

  • 5. Now, add the coconut milk and cook for 10 minutes.

  • 6. Then stir in the coriander, basil and fish sauce and lime juice.

  • 7. Add the fish and let it warm through.

  • 8. Serve with sticky rice
  • Tips

    • TIP: If you like spicy add more Thai Curry Paste

    • 4 Hake Steaks
    • To taste Salt and pepper
    • A little flour for dusting
    • 1 to 2 Tblsp vegetable oil
    • 1 Onion
    • 1 Tsp Freshly chopped ginger
    • 1 stem Lemon grass finely chopped
    • 1 to 2 Tsp red or green Thai curry paste
    • 1 Dried Asian lime leaf crumbled (optional)
    • 2 Tsp Palm sugar or brown sugar
    • 2 Cloves Crushed garlic
    • 2 tsp Fish sauce
    • 1 Can Coconut milk
    • To Taste Fresh Coriander
    • 12 Leaves Fresh basil (shredded)
    • 1 Fresh lime juice
