Christmas Cake/Rich Fruit Cake

Ingredients
- 200g dark muscovado sugar
- 200g butter
- 2 tbsp. black treacle
- ½ tsp. vanilla essence
- 3 eggs beaten
- 250g plain flour
- 200g sultanas
- 200g currants
- 200g raisins
- 100g mixed peel
- 100g glace cherries chopped
- 75g almonds chopped
- 3 tbsp. brandy or rum
- 1½ tsp. mixed spice
- for the marzipan:
- 4 tbsp. melted and sieved apricot jam
- 400g golden marzipan
- 400g ready to roll fondant icing
