Spinach & Potatoes (indian Style)

Method

  • 1) Cut potatoes into quarters.
  • 2) Fry potatoes until brown on all sides. Remove.
  • 3) Leave 1 tbsp oil. Fry ginger, garlic, onion, green chillies, dried chillies, cumin seeds.
  • 4) Add potatoes and salt. Cover and cook until potatoes are tender.
  • 5) Add spinach and cook uncovered until tender.
  • 6) Garnish with chopped tomatoes.
  • Ingredients

    • 4 tbsps Vegetable oil
    • 225g Potatoes
    • 1 piece 1 in long Ginger crushed
    • 4 cloves Garlic crushed
    • 1 Onion coarsely chopped
    • 2 Fresh green chillies chopped
    • 2 Dried red chillies coarsely broken
    • 1 tsp Cumin seeds
    • 225g Spinach trimmed and chopped
    • 2 Firm tomatoes coarsely chopped (to garnish)
    •  Salt to taste
