Sole with Spinach and Orange Sauce

Method

  • 1. heat the oven to about 180C

  • 2.Lightly brush the sole with olive oil and season well.

  • 3.Grill the sole for until just cooked.

  • 4.Bthe orange juice, honey and garlic to a simmer and reduce to half the volume

  • 5.Whisk in the olive oil and set to one side

  • 6.Lightly blanche the baby spinach in boiling water until just wilted

  • 7.Serve the sole on the baby spinach on a plate and just drizz over lightly with the warm orange juice
  • Ingredients

    • 4 Sole Fillets
    • 300ml Orange juice (fresh)
    • 1 Tblsp honey
    • 1 clove of crushed garlic
    • 10ml Olive oil
    • 200g Baby spinach
    • To taste Season with salt and pepper
