the yellow split peas must be cooked seperately first place them in a small saucepan and add boilig water. cook them untl almost done. drain and leave until reqired later on at stage 3.
1. add oil to a lage saucepan. Then finely chop the onion and add to the saucepan. allow onions to cook unil golden.
2. add the mince meat to the onions stirring frequently until the mince has browned then add salt and pepper to season as well as the mint.
3. now add the split peas and sliced courgettes with roughly a pint of water (top up if needed).
4. bring to boil then reduce heat and alow to simmer until the courgettes are cooked through and soft. appox 30 mins
This is an Egyptian dish thats been passed onto me from my grandparents. It is one of my favourite dishes an is a classic family dish from my childhood.
