Method

  • Turn oven to Gas mark 5 or 180 degrees
  • Heat oil in saucepan add onion and sauted until clear do not brown add garlic, tomato paste cook for 2 minutes. add Honey, chilli powder, thyme and vinegar and soya sauce, add stock and cook bubbling gently for 10 minutes. Put Ribs on baking tray in single layer brush with sauce, cook for 10 minutes. Drain off all juices from the meat. Pour the rest of the sauce over the spare ribs. Lower temperature of oven to 4 or 140 degrees cook for 1 ¼ hours

    • 2 pounds spare ribs
    • 2 tablespoons oil
    • 6 ounces finely chopped onion
    • 1 clove garlic crushed
    • 4 tablespoons tomato paste
    • 8 tablespoons vinegar
    • ½ teaspoon thyme or mixed herbs
    • ½ level teaspoon chilli powder
    • 6 tablespoons honey
    • 4 Tablespoons Soya Sauce
    • 2 beef stock cube dissolved in ½ pint boiling water
