Method

  • preheat oven 160/350f/gas mark 4. line a 2lb loaf tin with baking parchment.beat the cake ingredients together untill smooth.then scrape the mixture into the tin.bake for about an hr, covering the cake after 40mins if gets to dark.

  • syrup:3 tbsp icing sugar juice of 1 lemon.
  • mix the ingredients together and while the cake is still warm prick it all over with a skewer or fork.pour over the syrup.leave it to cool in the tin before serving.

    • 4oz soft butter
    • 6oz self raising flour
    • 6oz caster sugar
    • 4 tbsp milk
    • grated rined large lemon
    • 2 eggs
