Method

  • Saute onion in the oil. Add everything else except the stock. Cook for 10 min, stirring ocassionally.

  • Add stock then bring to the boil. Simmmer for 20 min.

  • Blitz till smooth
  • Ingredients

    • 1 tbsp Vegetable oil
    • 2 tsp Fresh Grated Ginger Root Juice
    • 750 ml Light Vegetable Stock
    • pinch Nutmeg
    • 1 ½ Butternut Squash Peeled and chopped
    • To Taste Salt and Pepper
    • 1 Medium onion peeled and chopped
