Drain & well rinse the herring, reserving the juice & onions for later. Scrape the skin off with a serrated knife, rinse again & chop
Blitz the challah (or spongecake), kickels, appls, 3 of the eggs, herring & onions from the jar. Add the sugar & pepper to taste. If too thick, add some of the juice from the herring.
Put in a dish, grate remaining egg over it & refrigerate.
