Method

  • 1. Chop onions, garlic and liver in a bowl and add beaten egg.

  • 2. Mix breadcrumbs, salt, pepper, nutmeg and herbs in second bowl.

  • 3. Heat lard and pour over onions etc and liquidise.
  • Pour into breadcrumbs.

  • 4. Line tin with rashers and pour in mixture.

  • 5. Cook in bain marie at 170°C for 1 1/2 hrs.

  • 6. Cool with weight on top.
  • Ingredients

    • ½ clove garlic
    • 1 onion
    • 12oz liver (chicken if you need a smooth pate pork if course needed)
    • 1 egg
    • 4oz breadcrumbs
    • 4oz lard
    • 2 bayleaves
    • 4-6 bacon rashers
    • 1tsp salt
    • ¼ tsp pepper
    • ¼ tsp mixed herbs
    • 1tsp nutmeg
