Leek, Onion and Potato Soup
Method
1. Bring the stock to the boil and add the prepared vegetables and simmer for 8-10 mins.
2. Liquidise. Season to taste.
3. Re-heat. Garnish with parsley.
Tip: Serve with a swirl of natural yogurt and chopped chives, can served chilled.
Ingredients
- 30 fl.oz vegetable stock
- 7 oz onions chopped
- 7 oz leeks trimmed and chopped
- 2oz potatos peeled and chopped
- pepper nutmeg
- 2 tsp chopped parsley
