Method

  • 1. Bring the stock to the boil and add the prepared vegetables and simmer for 8-10 mins.

  • 2. Liquidise. Season to taste.

  • 3. Re-heat. Garnish with parsley.

  • Tip: Serve with a swirl of natural yogurt and chopped chives, can served chilled.

    • 7 oz onions chopped
    • 7 oz leeks trimmed and chopped
    • 2oz potatos peeled and chopped
    •  pepper nutmeg
    • 2 tsp chopped parsley
