Broccoli Soup
Ingredients
- 1llb broccoli
- 1 onion chopped
- 1 clove garlic
- 1 bay leaf
- a pinch to taste salt and pepper
- 1 tsp lemon juice
- 1 pint vegetable stock
Method
- 1. Sweat the garlic, onion and broccoli for 5 mins in the oil and then add the vegetable stock and bay leaf. Simmer for 10 mins.
2. Remove bay leaf.
3. Puree the vegetables, add salt, pepper and lemon juice.
3. Add some florets of cooked broccoli and before serving add a swirl of single cream.
