Easy Baked Cajun Veg

Ingredients

  • 1 handfull Sunflower seeds
  • 5 pieces Brocoli
  • 1 small Courgette
  • to taste Mixed herbs
  • 2 tablespoons Schwarts Cajun seasoning
  • ½ small glass Red Wine
  • 3 tablespoons Olive Oil
  • 5 small cubes pp Brie or Stilton
  • 5 small cubes pp Chedder
  • 1 small Parsnip
  • 1 small Green pepper
  • 1 small Red pepper
  • 1 small leek
  • 6 Baby Potatoes
  • 5 Mushrooms
  • 5 pieces Cauliflower
  • to taste Salt and pepper
  • 1 small Sweet Potatoe

Method

First cook the baby potatoes for about 8 mins to soften them up a bit. (Theres no need to pre-cook the sweet potatoe)
Then roughly chop all of the veggies into large chunks and add to a large dish with the baby pots. Add the red wine and olive oil first then the mixed herbs, salt and pepper to personal taste. Give everything a good mix. Next add the cajun spice and give another good mix. Transfer all of the ingredients to a large casserole dish with a lid make, sure to get all of the wine and oil as this makes a yummy marinade. Cook in the oven on gas mark 5 for 45 mins then give everything a good stir. Cook for another 45 mins, stir again and take the lid off and cook for a further 10 mins. When serving sprinkle with the cubed cheese and the sunflower seeds.

Tip: I have listed the veggies I normally use but this works just as well with almost any veg.
