Method

  • Preheat oven to 150 C

  • Heat oil in frying pan & fry onions till golden. Drain.
  • Divide lamb into 6 pieces & fry for 2 - 3 mins.

  • Put lamb & mixed vegetables in a casserole dish.
  • Pour stock into the frying pan. add the tomatoes & seasonings then bring to the boil.

  • Pour over the lamb, cover & cook in the middle of the oven for 2 hours

  • serve with mashed potatoes.

    • 2 Tbsp Cooking Oil
    • 1 Onion Diced
    • 1 Middle Neck of Lamb
    • 225 g Mixed Vegetables
    • 113 g Tomatoes Chopped
    • 142 ml Meat Stock
