Method

  • Boil the rice in water for 10 minutes and drain all excess water.
  • Chop the onion in small cubes. In a clean pan heat the oil and add onion and sautee in oil for 3 minutes on medium heat and stir occassionally. Add chopped capsicum and cook for 2 minutes. Add the sweetcorn and cook for another 2 minutes. Add salt and soy sauce and mix well and stir it for 1 minute so that it does not stick to the pan. Leave to cool for about 5 minutes. Add to the cooked rice and mix well. Serve hot. This dish can be prepared earlier and heated in the oven in a casserole covered with kitchen foil.
