Method

  • Whisk all the ingredients well, take off the froth as it rises and put on a sieve. Fill some custard dishes with the mixture and cover with the froth.

    • ½ gill Sweet Wine
    • ¼ pound Sugar
    • 1½ pints Cream
    • 1 Lemon - juice and grated rind
