Method

  • 1 Pre heat oven to 180deg C
  • 2 In a large sauce pan ,heat oil over a low light,add
  • onion & garlic & soften.
  • 3 Add carrots & celery.Continue cooking for 5-10 mins
  • until soft.
  • 4 Add white wine,& bring to boil.add tomatoes,sugar
  • sliced lemon.season with salt & pepper then simmer
  • for 20 mins.
  • 5 Grease a shallow baking dish with a little olive oil
  • & lay fish in,pour vegetables around,season with
  • salt & pepper .
  • 6 Place in oven & cook uncovered for 45 mins-1 hour
  • until tender .
  • 7 Serve immediately garnished with slices of lemon
  • Tips

    • This dish works just as well with fish such as sea bass,
      snapper.or cod fillets.

    Ingredients

    • 4 whole Sea Bream,cleaned & scaled
    • 2 medium onions thinly sliced
    • 2 cloves galic ,peeled & finely chopped
    • 2 celery sticks thinly sliced
    • 2 carrots thinly sliced
    • 400 grm tinned chopped tomatoes
    • 150 ml dry white wine
    •  pinch of sugar
    • 2tbspn flat leaf parsley,chopped
    • 1 tspn fresh origano chopped
    • 1 medium lemon thinly sliced
    •  salt & freshly ground black pepper
