Make the stock, I use Italian Herb stock cubes which add a nice flavour but any stock can be used.
Start making the risotto by slowly adding the stock to the pan. Meanwhile grill the gammon steaks and red peppers, once grilled chop into small pieces. When the risotto rice is ready simply add the gammon/red peppers/spring onions and thyme. Serve with grated Parmesan.
Quick and easy 'work' day dinner but looks good at a dinner party to, quite nice as a starter but only need a very small portion, also can leave out the Gammon for a vegi option
