Method

  • The majority of time taken to do this is letting everything happen.

  • I have also left out quantity as it can be scaled up or down depending on the size you want, and the thickness of the layers. Everyone has different tastes. What I am describing now will probably feed 6.

  • Firstly start off with water boiling on a hob, then take the wrapper off your condensed milk can and let it boil for approximately 2 hours, this should caramelize the milk.

  • Whilst this is boiling empty half a packet of chocolate hobnobs into a bowl and start breaking until they're fully crumbled. After this melt a small amount of butter, add to the crumbled hobknobs and mix in until it starts sticking together (although not too much, you want it to be lightly sticking as if it oversticks the base tastes like butter)

  • Get your dish and layer the bottom with the hobknob base making sure to make it as flat as you can.

  • Leave in the fridge to set a bit harder until the condensed milk is ready. When you finally come round to opening the condensed milk first run it under a cold tap. This generally will just mean it's easier to hold, I also recommend opening it over a sink or similar as it tends to burst slightly.

  • After you've opened the tin pour the caramel onto your base, flatten it and leave in the fridge until set (this usually takes about 2 hours, but sometimes it takes a little longer depending on the amount you've used). A good test for how set it is is to get a teaspoon and take a little from the top, if it stays in shape its set, if it falls back in on itself it's not quite ready yet.

  • After it's set pour your double cream into a bowl and start to whisk. I personally have always done this manually, keep whisking until the cream thickens up and when you pull the whisk out the cream doesn't drip down.

  • Peel your bananas, chop them up into thin slices and layer the caramel with the bananas.

  • Then using a palette knife (or similar), smear the cream over the top of the bananas making sure you have a nice flat surface.

  • After this get your chocolate and grate it over the top of your cream layer. Et voila! Your Bannoffee Pie is ready to be served.
