Method
) melt the butter in a saucepan then add the onion, potoates. cover this and cook on a very low heat until onions are transparent
2) drain the sweetcorn, but retain some liquid from the tin and add to the saucepan. then stir in the cornflour
3) add the water, vegetable cubes and stir well and simmer until cooked
4) liquidise and season to taste
5) when ready to serve, heat it. add the cream on top and a little chopped parsley. serve with croutons
