Spicy Indian Potato Wedges

Method

  • NB Quantities of ingredients vary according to taste and how many potatoes you use

  • 1. Cut potatoes into wedge shapes – do not peel – and boil until cooked

  • 2. In a large bowl, mix all dry ingredients

  • 3. Add oil and lemon juice – stir thoroughly

  • 4. Add crushed garlic – stir in thoroughly

  • 5. Leave mixture on side for 10 minutes or so

  • 6. Add potatoes to mixture – coat well – leave to stand for anything up to several hours (can be as little as 30 minutes)

  • 7. Add coriander – mix thoroughly

  • 8. Empty potatoes with mixture out onto baking tray and bake in fan oven at 200C until golden brown and crispy (approx. 20 – 30 minutes)

  • Eat hot and enjoy!
  • Ingredients

    • 1 - 1.5kg Organic new potatoes
    • 1½ teaspoons Ground cumin
    • ½ - 1 teaspoon Turmeric
    • 2 large Crushed garlic cloves
    • up to 2 teaspoons Salt flakes
    • ¼ teaspoon or more Chilli flakes
    • ½ teaspoon Ground garam masala
    • bunch Fresh chopped coriander
    • 2 – 3 tablespoons Olive oil (not virgin)
    • medium / large Fresh lemon juice
