Roast Pork Chops with Sweet Potato, Garlic and Spring Greens

Method

  • 1. Preheat the oven to 180°C (fan 170°C, Gas 4).
  • 2. Pile the sweet potato, onion, garlic and fennel seeds into a large roasting tin.
  • 3. Mix the coriander and paprika with plenty of salt and freshly ground black pepper, then whisk in 2 Tbs of olive oil.
  • 4. Brush the pork chops with a little of this mixture and set them aside.
  • 5. Pour the rest of the olive oil mixture over the vegetables and toss to coat evenly.
  • 6. Roast the vegetables in the oven for 20 minutes.
  • 7. After 20 minutes, raise the oven temperature to 220°C (fan 200°C gas 7).
  • 8. Toss the greens in the oil in the tin with the vegetables, mixing them in. Place the pork chops on top of the vegetables and return the tin to the oven.
  • 9. Cook for a further 20-25 minutes until the pork and potatoes are cooked through and the spring greens are crisp at the edges.
  • 10. Serve immediately.

    • 650g Sweet potaoes peeled and cut into 2.5cm chunks
    • 1 large Onion peeled and sliced
    • 10 cloves Garlic peeled
    • 2 tsps Ground coriander
    • 1-2 tsps Smoked paprika
    • 4 Tbs Olive oil
    • 4 Pork chops
    • 200g Spring greens chopped into 5cm wide strips
    • 1 tsp Fennel seeds lightly crushed
