Microwave Risotto

Ingredients
- 250g rizotto rice
- 1 onion finely chopped
- 50g butter
- 250 ml vegetable stock
- 500 ml passata
- 500g cherry tomatoes
- 150g mozzarella drained and cut into chunks
- 25g cheese
- 500g mushroom sliced
Method
- 1. Put the rice, onion 25g butter into a large microwaveable dish.
2.Cover, then cook in the microwave on high for 3 mins.
3.Stir in the stock and passata, then continue to cook, uncovered, for 10 mins.
4.Stir it, then mix in the tomatoes, mushroom and mozzarella.
5.Microwave on high for about 8 mins. until the rice is cooked.
6.Leave it for a few mins.,then stir in the remaining butter, cheese and basil.
7.Season.
