Microwave Risotto

Method

  • 1. Put the rice, onion 25g butter into a large microwaveable dish.
  • 2.Cover, then cook in the microwave on high for 3 mins.
  • 3.Stir in the stock and passata, then continue to cook, uncovered, for 10 mins.
  • 4.Stir it, then mix in the tomatoes, mushroom and mozzarella.
  • 5.Microwave on high for about 8 mins. until the rice is cooked.
  • 6.Leave it for a few mins.,then stir in the remaining butter, cheese and basil.
  • 7.Season.

    • 250g rizotto rice
    • 1 onion finely chopped
    • 50g butter
    • 250 ml vegetable stock
    • 500 ml passata
    • 500g cherry tomatoes
    • 150g mozzarella drained and cut into chunks
    • 25g cheese
    • 500g mushroom sliced
