Sweet Potato Curry

Method

  • Preheat oven to 190c Gas 6
  • Heat oil in frying pan add onion and curry powder and stir well, cook for 2-3 minutes. Add chicken and mushrooms until sealed add potatos, passata,chopped tomatoes, and mango chutney season with salt and pepper add more curry powder to taste. Transfer to cassorole dish and cook in oven for 1 hour or until potatoe cooked and soft.

    • MERRINGUE
    • 4 sweet potatoes peeled and cut into large cubes
    • 2 tbsp olive oil
    • 1 onion chopped
    • 1 tbsp curry powder
    • 1 tbsp mango chutney
    • 500g passata
    • 1 small tin chopped tomatoes
    • 4 chicken breasts (diced)
    • 500g mushrooms chopped

    A favourite of all the Hamiltons scrumptious served with naan bread and raitas.
    For a stronger flavour curry leave out the sweet potatoes and add a little more curry powder.
