Heat oil in frying pan add onion and curry powder and stir well, cook for 2-3 minutes. Add chicken and mushrooms until sealed add potatos, passata,chopped tomatoes, and mango chutney season with salt and pepper add more curry powder to taste. Transfer to cassorole dish and cook in oven for 1 hour or until potatoe cooked and soft.
A favourite of all the Hamiltons scrumptious served with naan bread and raitas. For a stronger flavour curry leave out the sweet potatoes and add a little more curry powder.
