Roast the chicken in tin foil with sprinkling of lemon juice for 30 mins.Mayonaise-Heat oil.Add finely chopped onionand fry gentle for 5 mind.Stir in curry powderand cook for a further few mins.Stir in stock,puree,lemon juice and chutney.Stir until boiling.then simmer for 5 mins.Strain through a sieve and allow to cool before stirring in mayonaise and chicken.Arrange in bowl.This can be done the day before so the chicken absorbs the flavours.
