Method

  • Make the bread into breadcrumbs in a blender. Put into a roomy bowl with all the dry ingredients. Mix together thoroughly. Season well. Add the wet ingredients and mix well. The consistency should be "dollopy" - not too runny, not too dry. Place in greased baking dish (nice earthenware if possible) and put into medium oven for about an hour, or until golden brown on top, and fully hot in the middle (test with skewer). Serve with a tomato sauce: fry onion, root veg, bayleaf, allspice, 2 tins tomatoes, carrots; bring to boil, cook, blend, add lemon, worcestershire sauce, natural yoghurt. Serve in heated jug. Have lots of cranberry sauce or redcurrant jelly ready too.

    • small loaf/packet black bread (or interesting bread)
    • 250g grated cheddar
    • 2 onions grated or finely chopped
    • large mixed bunch fresh herbs chopped
    • medium packet pine nuts
    • medium packet seeds any
    • 2 tsp mustard powder
    • pinch cayenne pepper
    • large pot thick double cream
    • 1 jar passata
    • 200g ground almonds (optional)
    • 3 sticks celery finely chopped (optional)
    •  sauce ingredients: onion root veg bayleaf allspice 2 tins tomatoes carrots lemon worcestershire sauce natural yoghurt

    This is a delicious vegetarian roast which is great with all the usual trimmings (roast potatoes, parsnips, veg). And everything goes into the roasting dish raw - no precooking.
