Method
1. Rub the butter, flour and salt together.
2. Add sugar and pistachio.
3. Add the beaten egg little by little to form a stiff dough.
4. Shape the dough into a ball and chill it for 30 mins.
5. Preheat the oven to 180C/350F. Grease and line a baking tray.
6. Dust a work surface with flour and roll out the dough about 5mm thick.
7. Using a round cutter, cut out the biscuits and lay them on the tray at 2 cm apart and prick them with a fork.
8. Bake for 15 mins.

- 75g Butter
- 100g Selt-raising flour
- 0.5 tsp. Salt
- 50g Caster sugar
- 50g Pistachio
- 1 Large egg beaten
