Pistachio Biscuits

Method

  • 1. Rub the butter, flour and salt together.

  • 2. Add sugar and pistachio.

  • 3. Add the beaten egg little by little to form a stiff dough.

  • 4. Shape the dough into a ball and chill it for 30 mins.

  • 5. Preheat the oven to 180C/350F. Grease and line a baking tray.

  • 6. Dust a work surface with flour and roll out the dough about 5mm thick.

  • 7. Using a round cutter, cut out the biscuits and lay them on the tray at 2 cm apart and prick them with a fork.

  • 8. Bake for 15 mins.

    • 75g Butter
    • 100g Selt-raising flour
    • 0.5 tsp. Salt
    • 50g Caster sugar
    • 50g Pistachio
    • 1 Large egg beaten
