Method

  • put the garlic, egg yolks and lemon juice in a blender and whiz up briefly. Then with the motor running, slowly pour in the olive oil in a thin, steady stream until the mixture becomes the consistency of thick cream. Transfer to a bowl, stir in the mustard and season to taste, add more lemon juice if necessary.

    • 6 plump garlic cloves crushed
    • 2 egg yolks;at room temperature
    • 425ml olive oil
    • 3 tbsp wholegrain mustard
    •  freshly ground pepper
    •  juice from one small lemon
