Peel and boil new potatoes until soft (takes about 15/20 mins)
Finely chop the onion, green and red peppers
Pour 2 table spoons of olive oil into a non-stick frying pan and heat.
Cook the onions until brown and then add the green and red peppers.
Crack open 6 eggs into a separate bowl and add enough milk as if you were making a scrambled egg. Add salt and pepper and mixed herbs.
When the new potatoes are soft drain them and cut them into small cubes.
The secret is to stir the onions, peppers and potatoes together in the frying pan so that they are all immersed in the olive oil before pouring this mixture into the eggs and milk.
Stir all together and transfer the whole mixture back into the frying pan and make sure that it is smoothed out. Cook on a low light for about 5-7 mins . Next the top of the omelette needs to be cooked so place the frying pan under the grill until the top looks cooked and the egg is not runny.
When it has cooled down you will be able to transfer the omelette onto a round dish for serving.
