Chicken Madras Curry

Method

  • 1. Cook basmati rice in a large saucepan of boiling, salted water. Drain and return to pan. Cover and keep warm.

  • 2. Heat oil in a wok or large frying pan and sautee the onion for 5 mins until soft. Add the chicken and continue to fry for 5 mins until chicken is golden.

  • 3. Add curry paste and cook for another minute. Stir in beans and stock. Simmer on a low heat for about 8 mins until sauce thickens slightly and chicken is cooked through.

  • 4. Serve in bowls with the rice

    • Hi Rudi - yes we see what you mean - not a great recipe by the looks of it (sorry Lolo). However, each to their own and if Lolo like her Madras curry like this who are we to say otherwise.Rudi may we suggest that you look at a few of the other ,more authentic Madras curries on the Mydish site - check out the Madras curry by Martin Henley for example that looks like a good authentic one.

    • Opening a jar of Madras Curry paste is not really a recipe is it? Also the accompanying picture appears to be of something completely different?Never heard of any Madras recipe that contains beans (whatever beans they're supposed to be??)
