Method

  • 1. Cook the rice as per the instructions and set aside to cool.

  • 2. Put chopped peppers, peas and beans into a bowl with some water and microwave for 5 mins .

  • 3. Add the rice to the vegetables and then mix through the soft cheese and chopped basil. Season well with salt and pepper

  • Decorate with a few torn basil leaves.

    • 1 red pepper. chopped
    • 250g green beans
    • 115g frozen peas
    • 150g soft cheese
    • 2 tbsp chopped basil leaves. plus a few extra leaves to garnish
