Method

  • Cut the turkey meat into small pieces and place in a bowl with the rice,corn,green pepper and onion.
  • Combine the yoghurt, mayo and lemon juice and season well.
  • Fold the mixture through the turkey and rice and pile into a serving dish.
  • Garnish with water cress and serve with tossed lettuce and tomato salad
  • Ingredients

    • 450g cold cooked turkey
    • 225g cooked white rice
    • can 326g sweet corn
    • 1 large seeded and cut into strips green pepper
    • 1 onions chopped
    • 2 tabsp mayonnaise
    • 2 tabsp yoghurt
    • 1 tabsp lemon juice
    •  salt and pepper
