Cut the turkey meat into small pieces and place in a bowl with the rice,corn,green pepper and onion.
Combine the yoghurt, mayo and lemon juice and season well.
Fold the mixture through the turkey and rice and pile into a serving dish.
Garnish with water cress and serve with tossed lettuce and tomato salad
