Stuffed Tomatoes

Ingredients

  • 6 Large firm tomatoes
  • 1 dessertsp Finely grated Onion
  • To taste Salt and Pepper
  • 2 - 3 Tablesp Mayonnaise
  • 2 Hard boiled eggs
  • 100 gm White Fish like haddock fillet
  • 6 Black Olives
  • 6 sprigs Parsley

Method

Cut a slice from each tomato and scoop out the flesh and discard. Boil fish until cooked (about 20 minutes). Cool and flake finely. Place fish in a bowl with 1 chopped egg and grated onion and bind with mayonnaise. Season to taste. Fill each tomato and garnish with a wedge of egg, one black olive and a sprig of parsley.
