Method

  • Put orange juice in a pot together with cinnamon stick,grated lemon peel and sugar and bring to the boil.

  • Add the 8 washed nectarines (no need to peel),return to the boil and simmer until a fork goes in easily to the nectarine.

  • Remove nectarines from juice and put them in a dish on the side of the stove.

  • Pour orange liquor or brandy over the nectarines.

  • Then boil the juice vigorously until it has reduced to half the quantity.

  • Pour over nectarines and allow to cool.
  • Tips

    • The nectarines can be deep frozen and then used when out of season and not freely available.

    • 1 carton orange juice
    • 1 cinnamon stick
    • 2 Tblsp lemon peel
    • 1 Tblsp sugar
    • 8 nectarines
    • 6 - 8 Tblsp orange liquor
