Spicy Parsnip Rosti

Method

  • 1. Boil the unpeeled potatoes whole, in a large pan of salted water for 10 mins.
  • 2. After 5 mins. add the whole unpeeled parsnip.
  • 3. Remove from the water and leave to cool.
  • 4. Pre-heat the oven to 200C.
  • 5. Peel the potatoes and parsnips and then grate into a large bowl.
  • 6. Mix the spices with the melted butter and pour onto the grated vegetables.
  • 7. Mix it well.
  • 8. Take 8 large spoonfuls and flatten them onto a greased baking sheet.
  • 9. Cook for 15-20 minutes. Flip each of them and cook for a further 10 minutes.

    • I've just used this recipe (at double the quantities) as the 'staple' for a family meal. It's an excellent accompaniment to salmon and was very well received, even by my 2 teenage sons. It was also a great help in reducing the parsnip mountain in our fridge! Many thanks.

    • pinch of cayenne pepper
    • 25g melted butter
    • to taste salt
