put one heaped table spoon of cornflour into a microwave proof jug. Mix in with a tiny bit of milk to make a paste. Add about half a pint of milk to the jug and milky paste, stir well and put in the microwave. Nuke for 30 seconds and then stir. repeat this process until the sauce is thick (be really careful as it turns thick quite quickly and if you don't watch it closely it will boil over and make a hell of a mess). once the sauce is thick add about 2 handfuls of cheese and stir in to melt it (if it doesn't melt properly, chuck it back in the microwave for 10 seconds or so). I normally pour the sauce over something like cooked cauliflower or leeks and then sprinkle a bit more cheese on top. If you grill it for a few minutes it gets a lovely, bubbly cheesey topping. Great for serving with sunday roasts!
I am on a low fat receipe and have therefore struggled to find an alternative to cheese sauce (that taste like cheese !). This receipe is great, it is lower fat, meaning I can adapt all those great receipes. My kids also love it as its superfast and they dont have to wait, they love their veg with cheese sauce.
