Method

  • 1) Line a flat baking tray with grease proof paper and divide the marzipan into 3 pieces.

  • 2) Mix the cherries into one portion, the ginger in another and the apricots in the third portion of marzipan, mixing well, and using the icing sugar when the mix starts to become sticky.

  • 3) Divide equally each of the marzipan mixtures into small balls and keep separate from the other flavours. Again using the icing sugar if the mix becomes sticky.

  • 4) Leave the marzipan balls to re-set in the fridge while you melt the milk chocolate in a bowl over simmering water on the hob.

  • 5) once fully melted, grab a small skewer, or cocktail stick and a fork, and dip a single ball of each of the flavours into the chocolate and arrange on the baking sheet in groups of three, making sure you use one of each of the flavours for each sweet, and that they are sat touching each other on the tray so they bond to each other when cooled.

  • 6) Once they are all done, set the tray in the fridge for around 20 minutes or until all the chocolate is completely set. While you're waiting melt the white chocolate in the same way as before, and remove the sweets from the fridge. Drizzle the white chocolate across the milk chocolate sweets to give a great professional look, and return back to the fridge to set again.
  • Tips

    • Goji berries (Wolfberry) work very well in this mix, just remember that there are 3 balls of fruit mixed marzipan to make one sweet so make them as small as you can, other wise they become too large and quite sickly after two.

      I have also made this recipe using poppy seeds and Cashew Nut Butter in the balls of marzipan. A little extra work but so worth the taste experience I guarantee.

      Try other ways to 'dress' the chocolate to adapt to their occasion, like grated chocolate flakes instead of the white chocolate used in this recipe, also you could use coloured sugar or other children's confections, and also candied fruit pieces.

    • 50g/1¾ oz Dried Apricots (chopped)
    • 350g/12 oz Milk Chocolate
    • 25g/1oz White Chocolate
    •  Icing Sugar to dust
